Fall Stuffed Delicata Squash

While I’m a fan of basically all fall and winter vegetables, delicata squash just really takes the cake. I’ve been obsessed with it for years, as it’s simply one of the most delicious ways to embrace seasonal eating. I usually roast my delicata to enjoy in salads, grain bowls or just on its own.

I can’t recommend it enough roasted on its own, but for this recipe, I decided to get a little creative and use it as a vehicle for lots of other seasonal goodies. These Fall Stuffed Delicata Squash make for the perfect weeknight meal when you want something comforting, nutritious and super flavorful.

For the filling, you can really use any ground meat that you enjoy most – turkey, sausage, pork, chicken, you name it! All are fantastic sources of protein and provide a great base for any and all spices.

To continue to drive home the autumn flavors here, apples are a must. I love honeycrisp apples for their crunch and sweet/tartness, but please feel free to use whatever variety you prefer.

You’ll just sauté down the apples with onion and spices like sage and thyme for extra yumminess. Sage particularly is a go-to fall herb of mine, plus it’s a powerhouse in the nutrition department.

Sage has an earthy flavor and is a staple in all of my savory fall meals. Plus it’s been utilized for centuries for its healing properties! It’s high in nutrients and antioxidants, can protect oral health, reduce blood sugar levels, support memory and brain health and more.

Cook all of these goodies together, and load up your delicata squash “boats” – that’s truly all you’ll need for a tasty meal! Serve this alongside some roasted Brussels sprouts or a green salad for a balanced dinner that the whole fam will love.

Ingredients
  •  3  delicata squash
  •  1 lb ground turkey, chicken or pork
  •  1  yellow onion, diced
  •  1  medium apple, diced
  •  ½ cup walnuts, chopped
  •  2  cloves of garlic, minced
  •  2 tbsp extra virgin olive oil
  •  1 tbsp minced fresh sage
  •  1 tsp dried thyme
  •  salt & pepper to taste 

 

Directions
Preheat oven to 425 degrees.
Microwave squash for a couple of minutes to make cutting easier.
Cut squash lengthwise, and scoop out seeds. Cover with avocado, salt and pepper.
Lay squash on baking sheet, and roast for 30 minutes.
Meanwhile, add ground meat to a large skillet over medium heat, breaking into pieces. Once cooked, set aside in a separate bowl.
To the skillet, add olive oil, onion and a pinch of salt and pepper. Cook for a few minutes until softened.
Add garlic, apple, sage and thyme. Stir and cook for 5-7 minutes, until apples soften.
Add walnuts and cooked ground meat. Stir together, and cook for another 1-2 minutes to incorporate. Season with more salt and pepper to taste.
When squash is cooked, remove from the oven and flip upright. Fill your squash "boats" with the ground meat mixture.
10 Serve, and enjoy!
