Birthday Cake Bliss Balls

While October is actually my own birthday month (fellow Scorpios, put your hands up), the past several weeks I’ve been celebrating my sister’s 25th birthday that was at the end of September. To commemorate, my family took a trip to Napa to enjoy all of the wine, food and time together which we cherish now more than ever given that we all live in different cities.

And as y’all know, whenever I have a trip or get-together planned with loved ones, my favorite way to celebrate is with treats made in their honor. So along with a batch of @littlemissfoodie’s Cake Batter Cookies (check out how those turned out here), I know that these Birthday Cake Bliss Balls would be right up my sister’s alley.

Rainbow sprinkles have been her favorite thing since childhood, therefore including those in these treats was a nonnegotiable. Plus, since she absolutely loved my Cinnamon Bun Bliss Balls, I wanted to make a reminiscent recipe with a little extra birthday flair.

I found that the key to getting that real cake batter effect is with almond extract. This simple ingredient makes all the difference, especially when paired with classic vanilla as well. Plus, I highly recommend using oat flour over almond or coconut flours due to its mind flavor. While the others would work, the result will have a mild almond or coconut essence.

My one major tip for choosing sprinkles is to look for those that don’t include artificial colors and dyes. The ones I used came from Whole Foods and rely on natural plant sources such as beets, turmeric and spirulina to give these fun treats their color.

While this recipe is perfect for those looking to celebrate a special occasion, these healthy but decadent tasting treats make each and every day a party. So go ahead and light a candle, make a wish and live it up like there’s no tomorrow  .

Ingredients
  •  1 cup oat flour
  •  2 tbsp maple syrup
  •  ½ cup unsalted creamy cashew butter
  •  2 tbsp unsweetened nut milk
  •  2 tsp vanilla extract
  •  1 ½ tsp almond extract
  •  ½ tsp salt
  •  sprinkles for rolling

 

Directions
 
Add all of the ingredients to a bowl. Mix until a smooth dough forms.
Scoop and form into about 12 balls. Roll in sprinkles.
Store in the fridge or freezer.
