Chocolate Cherry Energy Balls

I feel like I say this for every recipe I create, but truly the chocolate cherry flavor combo is one of my all-time favorites. Since I was little, chocolate cherry ice cream, black forest cake, you name it, have been my JAM.

So as I began to think about something Valentine’s Day-appropriate to whip up for this coming week, I knew this classic had to make a reappearance. Maybe I’ll also throw in a batch of my Cherry Almond Brownies or Chocolate Cherry Almond Granola while I’m at it?!

In these bites, though, I get all of the chocolate-y flavor with both the protein powder as well as a bit of cacao powder.

I typically look for a protein powder that has simple, plant-based ingredients, and it’s an added bonus if it likewise includes superfoods, adaptogens, etc. Utilizing this in energy balls is the perfect way to amp up these snacks with protein to keep you fueled and satisfied.

Likewise, cashews and pecans make an appearance in these bites, though you’re welcome to use any type of nuts you love best or have on hand already. For those interested the real scoop on nuts, my Why I’m Nuts About Nuts (& You Should be Too) blog post provides all of the details you need!

Throw all of these ingredients in your high speed blender or food processor, mix in your dried cherries and chocolate chips, roll into balls, and you’re in business.

Ingredients
  •  1 cup gluten free rolled oats (or sub for oat flour)
  •  ¼ cup chocolate protein powder
  •  1 tbsp cacao powder
  •  ½ cup cashews
  •  ½ cup pecans
  •  ¼ cup maple syrup
  •  ¼ cup coconut oil, melted
  •   cup dried cherries, roughly chopped
  •   cup vegan chocolate chips (I use Lily's Semi-Sweet Baking Chips)
  •  pinch of salt

 

Directions
 
Add oats, protein powder, cacao powder, cashews, pecans and salt to a high-speed blender or food processor. Blend until completely combined.
Pour mixture into a medium-sized bowl. Add maple syrup and coconut oil. Mix to form a dough.
Add in chocolate chips and cherries, and mix.
Roll into 14 balls, and store in an air-tight container in the fridge or freezer.
