Crispy Oven-Baked Tacos

It's a new year, but we're still keeping the Meals My Husband Loves series going! This seems to be a fan favorite, and I get it - who doesn't need some inspiration to get your significant other to love (and crave) healthy eating?

For this latest addition, we have these insanely delicious Crispy Oven-Baked Tacos that are a new staple in our own meal rotation! They're super easy to whip up and can be amped up with all of your favorite toppings.

You'll simply make the taco mixture with meat of your choice (beef, chicken, etc.), onion, garlic, taco seasoning, green chilis, and cheddar cheese.

Now for the fun part! You'll add your tortillas to a sheet pan, top with the meat mixture, and add a little extra cheese (this acts as your "glue"). Finish them off with a little avocado oil to help them crisp up, and let the oven to the work.

I love serving these with sour cream (or Greek yogurt), avocado, salsa, pickled jalapeños, you name it.

Ingredients

  • 2 tbsp avocado oil
  • 1 pound ground beef (or chicken)
  • ½ medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (4.5-ounce) green Hatch chilis
  • 1 packet taco seasoning (I love Siete Foods)
  • Salt & pepper to taste
  • 1/3 cup fresh cilantro
  • juice of 1/2 lime
  • 1 ½ cups shredded cheddar cheese (or Mexican cheese blend)
  • 8 tortillas (I found corn broke more easily, so I used flour)
  • Sour cream (or Greek yogurt), avocado, salsa, etc. to serve

Directions

  1. Preheat oven to 425 degrees. Line a sheet pan with parchment paper, & lightly spray with non-stick cooking spray.
  2. Add 1 tablespoon avocado oil to a large cast iron skillet over medium-high heat. Add ground beef or chicken, onion, and garlic. Cook for about 3-5 minutes, until no pink remains, and onion is softened. Crumble beef as it cooks.
  3. Add in green chiles, taco seasoning, salt and pepper. Mix to combine. Reduce to low heat.
  4. Add in cilantro, lime juice, and 1 cup of the cheese. Stir to combine & melt.
  5. Place tortillas on prepared baking sheet.
  6. Add a few spoonfuls of taco meat to each tortilla, covering just one half.
  7. Cover meat with an additional sprinkle of cheese (this acts as your “glue” to keep it all together).
  8. Fold the other half of each tortilla over to seal.
  9. Brush the tops of the tortillas with the rest of your avocado oil to help them crisp up.
  10. Bake until golden & crispy, about 12-15 minutes.
  11. Serve with toppings of your choice, and enjoy!
