Egg Roll in a Bowl

I've been teasing this recipe for FAR too long on my Instagram, so it's about time I got my act together! Regardless, you're going to want to be sure to save this one for your next easy weeknight dinner.

As you can imagine, it provides all of your favorite egg roll flavors in a little different (and easier) form. I also love that many of these ingredients are pantry staples and all relatively inexpensive to stock up on!

For all of the veggie goodness, onion, carrot, and - most importantly - cabbage provide tons of phytonutrients and fiber to keep your gut happy.

As for the protein, I personally like using ground pork for a real "egg roll" flavor (plus it's a great, underrated lean protein). If you prefer ground turkey, beef, etc. you're always welcome to swap for these as well.

Sauté it all up with some simple, Asian-inspired ingredients like coconut aminos (or gluten free soy sauce), sriracha, garlic, and ginger.

Together these provide aaaaall the flavor that will make this meal a new staple in your house.

Ingredients

  • 1 tbsp sesame oil
  • 1 yellow onion, sliced
  • 2 carrots, julienned or grated
  • 1 lb ground pork (can swap for ground turkey, beef, etc.)
  • 3 cups cabbage, thinly sliced
  • 1 heaping tbsp minced ginger
  • 2 garlic cloves, minced
  • 1/4 cup coconut aminos
  • 1 tbsp sriracha (more or less to taste)
  • salt & pepper to taste
  • thinly sliced green onion, fresh cilantro, and sesame seeds to top

Directions

  1. Pour sesame oil into a large skillet over medium-high heat.
  2. Add onion, carrots, salt, and pepper. Stir and cook for 2-3 minutes to soften.
  3. Add pork, and break into small pieces. Cook for a couple of minutes, until you see little pink left.
  4. Add ginger and garlic, and cook for another minute or so.
  5. Add in cabbage, coconut aminos, and sriracha, and stir to combine.
  6. Cook for another few minutes, until cabbage is softened and wilted.
  7. Serve in bowls topped with green onion, cilantro, and sesame seeds. Enjoy!
