Fudgey Date Energy Balls

All the chocolatey goodness you want plus the nutritious ingredients you need? I’m on board! Chocolate has always been my weakness, so naturally I look for any excuse to incorporate it into as many recipes as possible.

These energy balls are so fudgey and doughy, you’ll swear you’ve died and gone to heaven. Plus, they’re the perfect solution to quelling your nighttime sweet tooth or afternoon slump. Dates, or “nature’s caramel,” add sweetness along with several essential minerals such as zinc, iron and magnesium. Plus, the walnuts add a boost of Omega-3s and protein to keep you satisfied for hours while also helping to reduce inflammation and blood pressure.

And, of course, these balls have the perfect amount of chocolatey flavor, minus the added refined sugars. Raw cacao powder is full of antioxidants, iron, calcium, beta-carotene and magnesium. Also, the unsweetened coconut adds both texture and flavor as well as a great source of digestion-friendly fiber and heart-healthy fats.

Last, but never least, is the almond butter. It just wouldn’t be a complete recipe by G without my favorite, sticky staple. Almonds are a superfood for a reason–they’re full of antioxidants, vitamins, minerals and healthy fats that promote blood sugar regulation, lower bad cholesterol levels and so on. As always, make sure to use an almond butter (or any nut butter you choose) with super simple, minimal ingredients. It’s just too good by itself to add unnecessary junk!

These energy balls are simple to throw together, and I can guarantee the chocolatey goodness will have you coming back for more!

Ingredients
  •  1 cup pitted dates
  •  2 cups walnuts
  •  3 tbsp creamy almond butter (or any nut butter), at room temperature
  •  ¼ cup shredded unsweetened coconut, plus more for rolling
  •  3 tbsp raw cacao powder
  •  1 tbsp coconut oil, melted
  •  1 tsp vanilla extract
  •  ¼ tsp pink Himalayan salt

 

Directions
 
Add dates to your food processor and pulse until they form small bits. Scoop out and set aside.
Add walnuts to food processor and pulse into a fine meal.

*Note* be sure not to over-mix, or the walnuts will become butter!

Add the dates back in, as well as the shredded coconut, cacao powder and salt. Mix until combined.
Add almond butter, vanilla extract, and melted coconut oil. Mix until it has a dough-like texture.
Refrigerate dough for at least 10 minutes to make it more workable.
Scoop out dough and roll into balls. Cover with more shredded coconut, if desired.
Store in an airtight container in the fridge for up to a week or in the freezer.
