Healthy Gingerbread Cake with Cream Cheese Frosting

While there isn't a holiday flavor combo I'm not in love with - peppermint, eggnog, chai, etc. - gingerbread has been particularly hitting the spot lately. I've been making my Healthy Gingerbread Latte on repeat the past few weeks, which was the inspiration for this insanely delicious dessert.

I've been in a baking mood as of late, and this Healthy Gingerbread Cake is most definitely a new holiday favorite. It has the perfect amount of sweetness and warm, cozy spice to immediately put you in the holiday spirit.

Plus, this recipe just happens to be made with simple, nutrient-dense ingredients that will feeling you merry from the inside out. 

For the perfect gingerbread flavor, we use a combination of cinnamon, ground ginger, all spice, and nutmeg. Plus, molasses is my favorite secret ingredient you won't be able to get enough of this season. It's a must for that caramelized flavor that we need and love in gingerbread!

Blackstrap molasses specifically is packed full of essential nutrients, including iron, calcium, magnesium, potassium, phosphorus, and vitamin B6.

What might be my very favorite part of this festive cake, though, is the cream cheese icing. Simply mix together cream cheese (dairy-free optional - I love the Kite Hill plain option), Greek yogurt, a little maple syrup, and vanilla extract.

Top it off with a little sprinkle of cinnamon, and you're ready to serve this easy, healthy dessert at your next holiday party, family get-together, or any time you want a delicious dessert that feels a little extra special!


Ingredients

  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup
  • ¼ cup molasses (I used blackstrap)
  • ½ cup milk of choice 
  • 1 egg, ideally at room temperature (to help cake rise more easily) 
  • 1 teaspoon vanilla extract
  • 1 cup almond flour 
  • 1 cup oat flour
  • 1 ½ tsp ground ginger
  • 1 tsp cinnamon
  • ½ tsp allspice 
  • ¼ tsp ground nutmeg
  • ¼ tsp salt 
  • 1 tsp baking powder 

Cream Cheese Frosting

  • 8 oz cream cheese (dairy free optional - I used Kite Hill plain)
  • ¼ cup Greek yogurt
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Directions

1. Preheat oven to 350 degrees. Line an 8 x 8 inch baking pan with parchment paper, and cover with nonstick cooking spray.

2. To a mixing bowl, add wet ingredients - coconut oil, maple syrup, molasses, milk, egg, and vanilla extract. Whisk to combine completely.

3. Add the dry ingredients - almond flour, oat flour, ginger, cinnamon, all spice, nutmeg, salt, and baking powder. Mix to create a smooth batter.

4. Pour batter into prepared baking pan. Bake for 15-20 minutes, until a cake tester comes out clean. Allow to cool COMPLETELY before adding frosting.

5. To make frosting, add cream cheese, yogurt, maple syrup, and vanilla to a bowl. Mix until smooth and combined. Chill in the fridge while cake bakes.

6. Once cake is cooled, add frosting, and spread into a smooth layer. Sprinkle with cinnamon for a festive look if desired.

7. Cut into 9 squares, and enjoy! Store extras in the fridge.
