Mint Chocolate Energy Balls

Growing up, if you asked me what my favorite ice cream flavor was, the answer was without a doubt mint chocolate chip. And truthfully, nothing’s changed. I mean, how can you beat that combination?!

And while these flavors in ice cream will always remain supreme (check out my Peppermint Patty No-Churn Ice Cream to see what I mean) I still strive to enjoy this perfect duo in other forms as well. And it’s no shocker that energy balls are my go-to method for utilizing all of my favorites. They’re truly the most perfect afternoon snack, on-the-go morning fuel or evening sweet treat.

As for these specific bites of heaven, cacao is key to getting all of that chocolate-y goodness. Chocolate in its purest form, cacao powder is made by crushing cacao beans without including additional sugars or preservatives. Cacao is high in magnesium, iron, calcium and antioxidants to reduce stress and elevate mood. Use cacao powder in place of cocoa in your recipes for the same chocolatey taste but with added benefits.

But of course this combo is nothing without mint. Peppermint extract brings tons of flavor as well as many unexpected health benefits. Mint is incredibly rich in nutrients and proven to aid in digestion and boost brain function.

Likewise, almonds and cashews bulk up these bites with tons of protein and healthy fats to keep you satisfied and fueled up. Simply create a dough, roll into balls and store in your fridge for an energy-packed snack any time of day.

While they might not quite be mint chocolate chip ice cream, I can guarantee you that this healthy spin on a classic will leave you reaching for another  .

 PREP TIME20 mins

 

Ingredients
  •  1 cup gluten free rolled oats
  •  ½ cup almonds
  •  ½ cup cashews
  •  1 cup pitted dates
  •  ¼ cup coconut oil, melted
  •  ¼ cup cacao powder
  •  1 tsp peppermint extract
  •  ½ tsp salt

 

Directions
Soak dates in warm water for 5-10 minutes to soften
Place dates in a food processor or high speed blender. Mix until a paste has formed.
Add oats, almonds, cashews, coconut oil, cacao powder, peppermint extract and salt.
Mix until a crumby, well-combined dough has formed.
Scoop and roll into 16 balls.
Store in the fridge. Enjoy!
