Peach Soft Serve Nice Cream

I scream, you scream, we all scream for…nice cream? This lightened up ice cream alternative is my favorite treat to whip up using any frozen fruit that I have on hand. With frozen bananas as the base for “nice” cream, the additional ingredients and flavors are limitless for a healthy dessert in minutes.

If you follow me on Instagram (@goodness_with_g), you’ve seen the abundance of peach recipes and meals I’ve been posting lately, including this yummy Fresh Peach Chia Jam and Caramelized Peach Pancakes.

So naturally, peaches were the perfect summery addition to this dessert! Plus, they have the perfect balance of natural sweetness and tang that’ll satisfy your sweet tooth.

While you absolutely could just use peaches themselves, the additional frozen banana provides creaminess and thickness for more of a “real” soft serve feel. If you’d like to sweeten up the recipe a bit more, add a bit of honey or maple syrup, though I felt the fruit provided enough natural sweetness itself.

Likewise, I find that fruit of any sort is taken to the next level with a little cinnamon. In addition to its flavor, this warm spice also has incredible medicinal properties due to its high level of antioxidants and anti-inflammatory compounds that stabilize blood sugar, boost metabolism and more. Plus, a simple sprinkle creates a more interesting and memorable flavor to this tasty recipe.

As for the other ingredients, all you need are lemon juice and milk. Because I try to stay away from dairy as much as possible, I used almond milk, but cashew or oat milk would be perfect substitutes.

If dairy milk doesn’t disagree with you like it does me (read my post about Why I Ditched Dairy here), feel free to use the real deal. But this recipe might just show you how creamy and tasty dairy-free desserts can be (even ice cream!).

And though this nice cream is incredibly tasty on its own, personally, a bowl just isn’t complete without toppings, of course. For this version, I added a few more sliced, fresh peaches and Purely Elizabeth Grain Free Granola. This is one of my favorite store-bought brands when I don’t make my own at home.

Overall, simply top this creamy goodness with any fruit, nuts or seeds that you love. They create the perfect crunch and chew, which for me, is key to any good bowl of ice cream.

Whether you’re looking to satisfy your ice cream craving on the lighter side or simply want to put all of that frozen fruit to use, this recipe won’t disappoint. Plus, it’ll even be a new summertime favorite of both kiddos and hardcore dairy lovers alike.

Ingredients
  •  2 cups frozen peaches
  •  1  frozen banana
  •  1 tsp ground cinnamon
  •  2 tbsp lemon juice (one large lemon)
  •   cup plant-based or regular milk (I used almond)
  •  optional: 2-3 Tbsp honey or maple syrup

 

Directions
Add all ingredients to a high speed blender or food processor.
Blend until chunks begin to form. Stop to scrape down the sides and continue blending until you've reached a creamy consistency.
Serve immediately.

If you want a firmer result, place in an airtight container in the freezer for 3-4 hours. Note that this will make the mixture a bit icier. Allow to sit out at room temperature for about 10 minutes before scooping.
