Strawberries & Cream Energy Balls

Since I was a kid, my family has always been very into celebrating holidays. Birthdays, Christmas, you name it, we made it a big deal. And I’ve always loved that! Life is meant to be enjoyed and celebrated, right? So for the upcoming summer holidays, I’m having a little celebration of my own with these Strawberries & Cream Energy Balls!

Whether you need a little something festive to make for a Fourth of July get-together or Memorial Day potluck, I have you covered. Not only are these bites in-theme, but they’re also the perfect way to enjoy a favorite summertime flavor combination. And in true Goodness With G form, you can feel good about how these treats will make you feel as well!

As for these cute little bites, though, you’ll only need a few pantry staples you might already have on hand, such as rolled oats, cashews, coconut oil, maple syrup and vanilla. Plus, freeze-dried strawberries are simply one of my favorite things ever (anyone else grow up picking them out of the Special K cereal box?!). These days, I find them on the cheap at Trader Joe’s!

While the ingredients themselves make these energy balls extra delicious, I’m always a fan of a topping of some sort. I used the new Lily’s White Chocolate Baking Chips which are stevia-sweetened and super tasty, but you could also use coconut butter to drizzle on top.

Once you have these bites made and ready to go, I recommend storing them in the fridge or freezer to allow the topping to set and make for an extra dense and delicious result. Plus, this allows you store them to have on hand whenever you’re in need of a little pick-me-up.

Ingredients
  •  1 cup gluten-free rolled oats
  •  1 cup cashews
  •  ¼ cup maple syrup
  •  ¼ cup coconut oil, melted
  •  ½ cup coconut flour
  •  1 cup freeze-dried strawberries
  •  1 tsp vanilla extract
  •  pinch of salt
  • Topping
  •   cup white chocolate chips (can sub coconut butter)I used Lily's While Chocolate Baking Chips
  •  sprinkle of crushed freeze-dried strawberries

 

Directions
To a food processor or high speed blender, add oats and cashews. Blend until completely combined.
Pour mixture into a medium-sized bowl.
Add freeze-dried strawberries to your food processor or blender. Pulverize into a powder. Pour into the bowl with oats and cashews.
Add coconut flour, maple syrup, coconut oil, vanilla and salt. Mix into a well-combined dough.
Roll into 13 balls, and place on a plate or tray.
Melt chocolate chips or coconut butter in the microwave in 30-second increments. Drizzle over the top of your energy balls.
Top with an extra sprinkle of freeze-dried strawberries.

Store in the freezer or fridge. Enjoy!
