Caesar Chicken Salad

Y'all know I'm a biiiig chicken salad fan, and thus my chicken salad series on Instagram just felt right. If you're in the same boat, be sure to check these out as well:

The newest addition to this round-up is this tasty caesar version that is an absolute crowd pleaser around here. It's so incredibly easy to whip up and uses my all-time favorite homemade vegan caesar dressing.

I love it in my Kale Salmon Caesar and Chicken Caesar Pasta Salad and also often meal prep it for the week to make any salad ten times tastier.

Just blend up a few easy ingredients - cashews, lemon juice, olive oil, garlic, nutritional yeast, dijon, apple cider vinegar, water, salt, and pepper. You'll be amazed by how insanely tasty this combo is - just like your favorite caesar with a healthy twist!

Mix this up with your chopped or shredded chicken, celery, and red onion for a bit of crunch and flavor, and you're in business!

It's one of my very favorite high-protein meal prep recipes to have on hand that makes lunchtime truly enjoyable.

Chicken Salad

  • 1 rotisserie chicken, picked and shredded (you can sub for 3 cooked chicken breasts, chopped into chunks)
  • 3/4 cup diced celery
  • 1/2 small red onion, thinly sliced
Vegan Caesar Dressing (makes extra)
  • 1 cup raw cashews
  • juice from 2 lemons
  • 2 tbsp apple cider vinegar
  • 1 cup water
  • 2 tbsp extra virgin olive oil
  • ¼ cup nutritional yeast
  • 2 tbsp dijon mustard
  • 3 garlic cloves
  • 1 tsp ground pepper
  • pinch of salt


1. Add all of the dressing ingredients to a high speed blender. Blend until creamy and smooth. This will make extra!

2. To a bowl, add chicken, celery, and red onion. Pour in dressing to taste, and store extra in a jar in the fridge (great for salads!).

3. Serve on greens, in a sandwich, with crackers, etc.
