Golden Milk Banana Bread Muffins

When do you have the urge to bake? For me, it’s typically at night or when I’m having a crummy day (no pun intended). Lately, I’ve been experiencing some of the the winter blues – likely coming from a little homesickness after being with my family for several weeks over the holidays.

Spending time in the kitchen always lifts my spirits, and since I’ve been on a major Golden Milk kick lately, I decided to whip up these easy and nutritious muffins for this week’s baking sesh. I was going for the best of a cozy golden milk latte meets classic, dense banana bread – what more could you need?

One of this recipe’s secret ingredients that I truly can’t live without is Luna Fixa’s Curcuma Golden Paste. This easy to use paste is the perfect way to whip up a golden milk latte in no time (check out my complete recipe here), but it’s also a great addition to yogurt, smoothies and baked goods. If you need a little convincing about this whole turmeric-in-your-banana-bread thing, listen up. Turmeric is renowned for its incredible medicinal properties. This spice is filled with anti-inflammatory compounds and antioxidants that boost brain function, minimize joint pain, reduce cancer risk and even fight depression.

While optional, another ingredient that I sneaked into these crazy healthy muffins is lucuma powder from one of my favorite brands, Karen Berrios. This superfood is arguably the healthiest sweetener on the planet and comes from drying the nutritionally-potent lucuma fruit native to Peru. It’s loaded with pre- and pro-biotic fiber, vitamin B3 and antioxidants that boost the immune system and promote eye health. Plus, it’s low glycemic and thus doesn’t spike your blood sugar like most sweeteners.

As for the other ingredients, you’ll likely find most (if not all) of them already sitting in your pantry! And be sure to save those ripe bananas you might be temped to pitch, as they’re essential to any good banana bread.

Ingredients
  •  1 ¾ cups oat flour
  •  ¼ cup coconut four
  •  2  ripe bananas, mashed
  •  2  eggs
  •  3 tbsp Luna Fixa Curcuma Golden Paste
  •  2 tbsp coconut oil, melted
  •  ¼ cup nut milk
  •  ¼ cup maple syrup
  •  1 tsp vanilla
  •  1 tsp baking soda
  •  1 tbsp lucuma powder (optional)
  •  ½ tsp salt
  •  ½ tsp cinnamon

 

 
Directions
 
Preheat oven to 325 degrees. Place 12 muffin/cupcake liners in a muffin tin, and set aside.
To a bowl, add Golden Paste, coconut oil, maple syrup and eggs. Beat well until incorporated.
Add mashed banana, nut milk, vanilla, cinnamon and salt. Mix well to combine.
Pour oat flour and coconut flour into your bowl, and stir until well incorporated.
Divide batter into your 12 muffin liners, filling each about 2/3 way full.
Bake for 22-24 minutes, using a toothpick to check for doneness.
Place on a cooling rack, and serve with nut butter, coconut yogurt or other toppings of choice.
