Raw Brownie Bites

If you’ve followed me for a while or simply look at the sweets I share on the blog, it’s no surprise that I’m a chocoholic. Rarely does a day go by that I don’t enjoy a nightly piece of Hu or Evolved Chocolate or reach for one of my own fudgey creations.

And though I enjoy whipping up a baked treat like blondies or brownies every now and then, I typically rely on no-bake energy balls or truffles to store in the freezer and grab on the go. They take no time to make and never fail to satisfy.

When I’m in need of some chocolate but don’t want to heat up the oven, these Raw Brownie Bites couldn’t be more perfect. Plus, they’re made with minimal, nutrient-dense ingredients to fuel you up any time of day.

Ingredients
 
  •  ¾ cup oat flour, gluten free if desired
  •  ¾ cup raw cacao powder
  •  ¾ cup smooth almond butter (drippy is best)
  •  2 tbsp ground flaxseed
  •  ½ cup cacao nibs (can sub vegan chocolate chips)
  •  2 tbsp coconut oil, melted
  •  ¼ cup maple syrup
  •  1 tsp vanilla extract
  •  pinch of salt

 

Directions
Add all ingredients to a medium-sized bowl.
Mix together until completely incorporated. You might have to get in there with your hands - they're your best tool!
Scoop and roll into about 17 balls. Store in the fridge or freezer. Enjoy!
