Chocolate Covered Strawberry Brownies (DF/GF)

When I say these brownies are just as delicious as they are beautiful, I’m not lying! I’ve been feeling much more inspired in the kitchen lately then I have been in a while, and that’s such a wonderful feeling.

And since I get some of my best ideas from holidays and events that embrace food, Valentine’s Day came at the perfect time! Whether you’re celebrating with a significant other, best friend or yourself (self love is the most important type!), you deserve to make it special.

And these Chocolate Covered Strawberry Brownies are guaranteed to make you feel the love! They’re a fun spin on a classic romantic treat that embraces one of the absolute best flavor combinations. Plus, they couldn’t be easier to whip up!

I always try utilize what I already have in my pantry when making dessert, and this recipe is no exception. To start, you’ll only need a few staples like almond flour, coconut sugar, cacao powder, salt and baking powder. As for wet ingredients, eggs, coconut oil and vanilla are all that’s required.

To make these treats extra fudgey with a healthy twist, my trick is always raw cacao powder. It’s unsweetened, loaded with polyphenols, an antioxidant great for anti-aging and heart health as well as essential minerals like magnesium.

Skip the sweetened cocoa powder we used growing up and make this simple superfood swap to make even the healthiest of treats taste decadent.

But what really makes these brownies stand out is the strawberries. They’re a fan favorite for a reason with the perfect balance of sweet and tart. But strawberries (and berries in general) are also a nutritional powerhouse that shouldn’t be overlooked. Strawberries are rich in gut-loving fiber, vitamins and minerals such as vitamin C, potassium and folate!

You’ll simply slice them up and use to top off your brownies. Finish it all with a healthy chocolate glaze made from coconut oil and cacao powder, and you’re set.

Ingredients
  •  1 cup almond flour
  •  1 cup coconut sugar
  •  ¾ cup cacao powder (or unsweetened cocoa powder)
  •  ½ cup coconut oil, melted
  •  2  eggs
  •  1 tsp baking powder
  •  ¼ tsp salt
  •  1 tsp vanilla extract
  •  ¾ cup chocolate chips or chunks
  • Strawberry Topping
  •  1 cup diced fresh strawberries
  •   cup coconut oil, melted
  •   cup cacao powder (or unsweetened cocoa powder)

 

Directions
Preheat oven to 350 degrees. Line an 8x8 baking sheet with parchment paper, and set aside.
To a medium sized bowl, add almond flour, coconut sugar, cacao powder, baking powder and salt. Mix to combine.
Add coconut oil, eggs and vanilla extract. Mix to create a wet, sticky dough.
Fold in chocolate chips or chunks.
Pour batter into parchment-lined baking sheet. Use a spatula to spread into an even layer.
Bake for 20-22 minutes.
Meanwhile, mix together melted coconut oil and cacao powder to create a glaze.
When brownies are cooled, top with diced strawberries, and pour the chocolate glaze evenly over the top.
Place in the fridge for an hour to set before cutting into squares. Store extras in an air-tight container in the fridge.
