Fudgey Pumpkin Brownies

It’s no surprise that I’m feeling pumpkin desserts these days, y’all. First it was my Pumpkin Chocolate Chip Blondies, and now we have these Fudgey Pumpkin Brownies to balance things out!

But for or any other die-hard chocolate lovers out there, these are for you. They’re filled with lots of fudgey goodness and wholesome ingredients that both your sweet tooth and body will love.

The base of these brownies is made from almond flour, pumpkin purée and cacao powder, making them naturally gluten free. Plus, pumpkin is one of the best additions to both sweet and savory recipes thanks to the amazing moisture and subtle sweetness it provides.

Pumpkin is also rich in vitamin A and antioxidants that can help support your immune system, protect eye health, promote healthy skin and more.

But while pumpkin is key to holding these brownies together, chocolate is the real star of the show! Cacao powder provides tons of antioxidants, iron, calcium, beta-carotene and magnesium to support immune health, benefit digestion, boost cognitive performance and more.

But what is any fall treat without pumpkin spice, right? This is one of my go-to spice mixes for just about anything, but it’s especially tasty in baked goods. I usually find mine at Trader Joe’s, but you can snag a jar at most any grocery.

You could even whip up your own pumpkin pie spice mix if you’re feeling extra *domestic* too! It’s just a combination of cinnamon, nutmeg, ginger, cloves and allspice, which together just scream fall. Plus, these are all packed anti-inflammatory properties for an added health boost!

And since I’m always trying to make things easy and simple in the kitchen, this recipe is a one bowl wonder. Just throw all of your ingredients together, and bake it up into tasty, healthy brownies.

Ingredients
  •  1 cup almond flour
  •  1 cup pumpkin purée
  •   cup cacao powder (or unsweetened cocoa powder)
  •   cup chocolate chips, plus more for topping (I use Lily's Stevia-Sweetened Baking Chips)
  •  1 tsp pumpkin pie spice
  •  1  egg
  •   cup maple syrup
  •  1 tsp vanilla extract
  •  ½ tsp baking powder
  •  ½ tsp baking soda
  •  ¼ tsp salt

 

Directions
Preheat oven to 350 degrees. Line an 8x8 baking pan with parchment paper and set aside.
To a medium-sized bowl, add pumpkin purée, maple syrup, egg and vanilla. Whisk together.
Add almond flour, cacao powder, pumpkin pie spice, baking powder, baking soda, and salt. Mix to form a wet dough.
Add chocolate chips, and fold into your batter.
Pour dough into parchment-lined baking pan. Smooth with a spatula to create an even layer. Sprinkle the top with additional chocolate chips.
Bake for 20-25 minutes, until toothpick or knife comes out clean.
Allow to cool before cutting into 9 squares. Enjoy!
