Strawberries & Cream Overnight Oats

Come this time of year, I think we could all use a little something that feels like summer, right? Longer days and warmer weather are coming, so let's channel it with these Strawberries and Cream Overnight Oats!

Y'all are always asking me for more high-protein breakfast ideas, and for those of you who are on-the-go in the morning, these will be your new staple. My secret to making oats satisfying (and actually filling) is adding protein powder and Greek yogurt.

Chia seeds are another staple ingredient in my overnight oats as they help them get extra thick and creamy. Plus, chia seeds provide great fiber and omega-3 fatty acids, making them one of my personal favorite superfoods.

For this flavor combo specifically, diced fresh strawberries, Greek yogurt, and vanilla extract add all the creamy goodness that truly does feel like summer.

Mix them all up, and let the fridge do the work for an easy, meal prep breakfast you'll want to make again and again!

Yields one serving

1/2 cup oats
2 tsp chia seeds
1 scoop protein powder (I used Equip Foods strawberry flavor but you could swap for any vanilla)
1/2 cup milk of choice
1/4 cup Greek Yogurt
1/2 cup diced fresh strawberries, plus more for topping
Splash of vanilla extract
Pinch of salt
Honey, agave, or maple syrup to taste (optional)

1. Add all of the ingredients to a jar, and mix well to combine.
2. Store in the fridge overnight to thicken, or for at least 4 hours.
3. Top with more fresh strawberries, additional Greek yogurt, nut butter, or whatever else you love. Enjoy!
